    Counting distinct saponin types is one simple way to see the difference. Fresh Korean ginseng already carries 25. And it is still only the starting point, because the root is not finished yet.

    The process

    Steaming nearly doubles the spectrum.

    Fresh ginseng becomes red ginseng through controlled steaming and drying. This step does not just preserve the root. It generates ginsenosides the fresh root never had, widening the profile from 25 types to 43.

    Through steaming, ginsenosides such as Rh1, Rg2, and Rg3 are newly generated, taking total saponin types from 25 to 43.

    What is the difference between red ginseng and white ginseng?

    Both come from the same Panax ginseng root. White ginseng is simply dried; red ginseng is steamed and then dried.
